John Knox Village Celebrates National Nutrition Month

John Knox Village Dining Services celebrated National Nutrition Month in March with activities coordinated by the Village’s new dietitian, Sarah Conniff.

Throughout the month, the Village, led by Sarah, educated individuals about the importance of eating a variety of nutritious foods; how to plan meals and snacks; and how to cook healthy and tasty foods at home. National Nutrition Month activities included the following.

  • Each of the restaurants showcased a different meal each week that focused on brain health, the Mediterranean diet and immune health.
  • Sarah presented information at informational tables at the restaurant each time it features a National Nutrition Month meal. She answered questions, shared resources and provided hand-outs, including a menu guide for each of the Village restaurants to help diners with different dietary needs make educated choices.

In addition to the on-campus events, Sarah joined Better Kansas City’s Bill Hurrelbrink to chat about foods to improve brain health and ways to “celebrate a world of flavors.” Check out her interview!
